Four Cheese Mac & Cheese Muffins

This recipe uses Monterey Jack, cheddar, mozzarella and provolone cheese, and the addition of evaporated milk gives the dish extra richness. Bake the mac and cheese in muffin cups, which turn out to be the perfect single serving size.
