3 Ways to Create Food AwarenessLooks can be deceiving. The appearance of food is not always a good indicator of its actual portion and content. That's why food awareness is so important -- it allows people to make informed and healthful choices when it comes to their meals. Learn 3 ways to shock them about their food.

Apple Strudel

Ingredients:

  • 16 phyllo dough sheets, about 1 package, thawed
  • 2 tablespoons olive oil
  • 1 tablespoon melted butter
  • 4 apples, peeled, cored, and sliced thinly, about 4 cups (Granny Smith)
  • 1 lemon, juice and zest
  • 4 tablespoons sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • pinch nutmeg
  • 1/4 cup white, plain bread crumbs (panko are best)

Directions:

    1. Thaw the phyllo dough in the refrigerator overnight.
    2. Melt the olive oil and butter together until just melted. It is best to do this in a microwave.
    3. Mix the apple sliced with the lemon juice and zest, the sugar and the spices.
    4. Place one sheet of phyllo dough on a large piece of waxed paper, parchment paper or clean kitchen cloth.
    5. Dab with the oil/butter mixture using a brush.
    6. Sprinkle bread crumbs on the layer and then add another layer of dough.
    7. Continue in this fashion until you have 8 layers of dough.
    8. Sprinkle the top layer with crumbs and add the apples on one edge. Roll up the strudel tightly using the paper to help you.
    9. Place the strudel on a nonstick pan or lightly greased baking pan. Brush with a little oil/butter mixture.
    10. Repeat using the rest of the dough and apples to make one more strudel.
    11. Bake your strudel at 350 degrees for 50 minutes or until golden brown on top.
    12. Allow to cool and serve with a light sprinkle of powdered sugar (optional). Cut each strudel in 2 inch pieces.

Nutrition Information: Serves 12. Each 2 inch slice serving: 148 calories, 5g fat, 1g saturated fat, 0g trans fat, 3mg cholesterol, 139mg sodium, 24g carbohydrate, 1g fiber, 8g sugars, 2g protein.
