The Dangers of Going Wheat Free
Allergies are nothing to envy. People who are unable to consume gluten, be they intolerant of the protein or actually afflicted with celiac disease, have a much more difficult time in their day to day lives than those of us who can eat wheat with abandon. So the undeniable fact that eschewing gluten is becoming, well, cool, is a troublesome trend. It doesn’t just trivialize the very real problems of the gluten sensitive, but it takes tremendous (and unnecessary) time, effort, and expense. And then there’s the very real possibility that, whether or not you truly are gluten sensitive, the shift in your diet can cause some serious holes in your nutrition. Like what?
