    Walking While You Work
    A study published in the Archives of Internal Medicine found that adults who sat for more than 11 hours a day had a 40% chance of dying within 3 years from any cause, compared to those who sat for less than 4 hours a day. The chances increase by 15% for those who sat for 8 to 11 hours a day, as compared to those who sat for less than 5.

    The American Institute for Cancer Research recently published report about sitters that shows that there is no difference for sitting time between people who go to the gym and those who don’t! And if that doesn’t shock you, then I’m pretty sure that this one will — it shows the increase in cancer risk for people who are sedentary all day!

    For most busy people working in offices across the U.S., an 8-hour sedentary workday makes the issue of physical activity not a matter of will but a matter of time.

    So, what are we to do?

    Americans are eating way too much sodium. All the latest studies (from the Dietary Guidelines for Americans, MyPlate, the CDC, etc) point to general overconsumption of sodium. Sodium can pose all kinds of health risks, and even when people think they're cutting back on it, they could still be eating way more than they think they are.

    So what's a health educator to do? How can you spread the word about sodium consumption and its dangers?

    After the discussion on mangos being the most consumed fruit in the world I realized I didn’t know as much about this fruit as I thought. So I did some additional research.

    While it might be the most eaten fruit in the world, it’s still far down the popularity list in the United States. According to a 2012 study by Fresh Facts Shopper Insights found at www.mango.org mangos are only purchased by 14% of the households in the US.

    Vegetarian Quesadillas

    Serves: 3 | Serving Size: 1 quesadilla
    Total Time: 10 min | Prep: 5 min | Cook: 5 min

    Ingredients:
    spray olive oil
    6 small low-fat whole wheat tortillas
    1 can black beans (no added salt), drained
    1/4 cup shredded cheddar cheese
     
    Directions:
    1. Heat the beans in a covered bowl in the microwave.
    2. Heat a nonstick pan over medium heat OR heat a pannini maker or quesadilla maker.
    3. Lightly drizzle or spray the pan with oil.
    4. Place one tortilla down on the pan. Top with 1/2 cup beans and a sprinkle of the cheddar cheese.
    5. Top with a tortilla. Lower the press or cook in a nonstick pan.
    6. Cook each side until it is brown, about 3 minutes on each side.
