At this time of year, we often want something cool for dinner that doesn't involve ovens or long cooking times.  Enter: salads.  And no, they don't have to be the same old salads!  There are lots of ways to make salads that are different, satisfying, and just right for hot summer evenings.

To prove my point, I've put together a list of different low-carb salads from various parts of the world.  Anyone for Seafood Nicoise?

I'm a big fan of chopped salads, where the lettuce is chopped so that it blends with the other ingredients.  Each bite has a different combination of flavors, and you don't have to contend with giant lettuce leaves.

Crisp, crunchy, refreshing, and deliciously different, this chicken salad made with cabbage and red peppers is perfect for a hot summer day.

We don't have to have tortilla chips in our salads!  Here are all the great flavors of a taco salad, minus the extra carbs.  If you cook the meat earlier in the day, you can just throw it all together at dinner time.
