It's that time of year when pumpkins are everywhere - at the market, in people's yards, and at the schools. Happily, pumpkins are great for low-carbers because they are packed with nutrients, but the carbs are lower than many other squashes. Keep a few cans around all year long for quick soups and "cereal".
