| | Why don't I don't tend to use the crockpot in the summer? I don't know, but for some reason when the weather gets crisper I find myself thinking about the stews and heartier meals that come from the crockpot. A bonus: almost all things you make in a crockpot freeze well. So even though my husband and I are empty-nesters, it's great that we can make several meals all at once. Have a happy, relaxed weekend! Laura | | Tips for Crockpot Cooking There are a few pitfalls in trying to make tasty slow cooker (crock pot) meals. Here are some of my tips for overcoming them, with links to low-carb recipes
| Try this Hungarian Goulash I hadn't made this for a long time, but I did earlier this week. My husband and I agreed that we'd forgotten how good it is! Great comfort food. I had the butcher at my local market take the meat off the bone and cut up the meat, and he included the bone in the package (since I'd paid for it anyway). I believe it added a great depth to the sauce.
| Crock Pot Ropa Vieja This Cuban dish of beef, peppers, and onions is delicious and is a great leftover-generator for a few different meals.
| Crock Pot Chicken Cacciatore I use chicken thighs for this classic Italian dish so it will stand up better to long heat. Yum!
