 I just read an article this morning that the "traditional breakfast" of cereal, juice, and coffee is shifting.  Without going into how "traditional" that breakfast is (I would say "not"), it turns out that cereal and juice sales are down (as is homebrewed coffee).  They said that people are going for (gasp) more protein and less sugar in their breakfasts!  Woohoo!  Of course, the cereal manufacturers are intending to fight back with "formulations with less sugar and more protein", which is exactly what you'd expect.  Hey, large food corporations, how about instead of "formulations" you offer some actual FOOD??  But frankly, if it will get people out the door fast in the morning, they will eat it (breakfast bars are on the rise).  Here are some ways to get YOU out the door fast without a sugar crash mid-morning.  Have a wonderful weekend - Laura

Quick Low-Carb Breakfasts

 With our busy lives, having a quick, yet healthy, breakfast available is essential to getting the day started right. Here are some tips to speed up the process.

Easy Ways to Cook Eggs

Instant Flax Peanut Butter Hot Cereal

 Boil water, pour over flax seed meal, add a glob of peanut better - done! You may want to grab a piece of cheese on your way out for more protein, but this is a great way to have a comforting bowl of hot cereal with lots of fiber and healthy fat.

Another idea is a breakfast "pudding" (I was kind of going after the more British use of the word, as it isn't creamy) where you put almond meal in a bowl with eggs and microwave it. Examples:


Muffins

 One quick breakfast tip is to make some low-carb muffins or coffee cake and put them in the freezer to defrost at a moment's notice. Here are my low-carb recipes for muffins and quick breads. Pancakes can also be frozen.
