 It's that time of year when pumpkins are everywhere - at the market, in people's yards, and at the schools. Happily, pumpkins are great for low-carbers because they are packed with nutrients, but the carbs are lower than many other squashes. I like to keep a few cans around all year long for quick soups. Pumpkin: Low-Carb Super Food
It's delicious, allowed on Atkins Induction, and can be used in everything from main dishes to deserts. Once you branch out with it, you'll realize pumpkin can be a year-round nutritious addition to your diet. Here's lots of nutrition information and links to recipes.
