I enjoy pie as much as the next person, but I also realize that pie contains a lot of fat and calories. But there are some ways to lighten the load, principally by switching from regular pie crust or topping to a phyllo crust. Light and flaky, phyllo satisfies the need for something crispy and even buttery tasting -- if you want to brush the layers with a little butter or spray with butter-flavored cooking spray. So this week, try your hand at some yummy phyllo-based (or topped) pies and tarts, both sweet and savory.
