Now, before you laugh us off your screen, think about it for a minute. This salad wouldn't be a sad little salad that you eat because you feel like you have to order a salad. Nor would it be an eerily insincere salad like the ones people are freaking out over on Women Laughing Alone with Salad. No, this salad would be a tasty health-boosting salad. It offers a homemade meal with a side of huge health benefits. What's not to love?

Salsa Month Recipe: Salsa Baked Fish

Salsa Baked Fish

Serves: 4 | Serving Size: 1 fish fillet with 1/2 cup sauce

Ingredients:

  • 1 teaspoon oil
  • 1/2 medium onion, chopped
  • 1 large tomato, cored and chopped
  • 1/2 green bell pepper, chopped
  • 1/4 cup chopped cilantro
  • 1/2 cup low-sodium chicken broth
  • Dash hot sauce
  • 4 4-ounce fillets of lean fish

Directions:

  1. Preheat oven to 350 degrees Fahrenehit.
  2. Heat a large, ovenproof skillet over medium-high heat. Add oil and saute onion until golden, about 3 minutes. Add the tomato, pepper, cilantro, chicken broth, and hot sauce, making a salsa.
  3. Place the fish fillets on top of the salsa; cover and bake in the oven until done, about 10 minutes.
  4. Serve hot - we recommend pairing this dish with brown rice and steamed vegetables. Garnish with fresh lime wedges.
