There's something about kneading dough that I find therapeutic. It certainly gives my hands a good work out; but it's also very satisfying to feel the dough yield under the heel of my hand, and to form it into a pizza base or a loaf of bread. So this week I am sharing some recipes that will put your hands to good work. So grab your apron, your rolling pin and let's begin.

 

Homemade Bread
When you look at packaged bread, don't you ever wonder at the long list of ingredients, often with salt and sugar (or worse, high-fructose corn syrup) high on the list? Some of these, of course, are preservatives. With warm home made bread, fresh out of the oven, longevity is almost never an issue, as the lure of freshly baked bread ensures it gets eaten all too quickly

100% Whole Wheat Bread

I love whole-wheat bread, but I find that most packaged brands of whole-wheat bread are too sweet; plus,"sweetened with molasses" (or "just a touch of honey") is a marketing lure. So I prefer to make my own whole-wheat bread, which while including a little of the aforementioned honey, is more like the English whole-wheat bread of my childhood.


New York-Style Bagels
Most brands of packaged bagels, and even stores' own bakery bagels, bear little resemblance to the real thing. A bagel is meant to be small and dense, not large and doughy. While they take a little work, these homemade bagels are a bit closer to to the real thing and well worth the effort. My kids love them.

Homemade Pizza Dough

Pizza may not necessarily be alow-fat food, but it's nice to eat a slice from time to time (note "slice" rather than a whole pie). As my girls will attest, delivery pizza, or carry out pizza, is usually cold by the time it gets home and sometimes a bit soggy in the middle. The solution, other than giving up pizza? Make your own.
