Winter Soups | While we in the Pacific Northwest are enjoying an early spring, much of the United States remains in a deep freeze and likely in need of some warm soup! So for my snowbound readers, here is a selection of warm and comforting soups filled with plenty of healthy vegetables. | | Winter Vegetable Soup | My favorite way to enjoy a vegetable-based soup is to puree it, making a velvety blend of goodness, without the need for cream or butter. While I use chicken broth in this soup, feel free to use a vegetable broth instead for a real vegetarian soup. | | | Lentil and Black Bean Soup | This Lentil and Black Bean soup is packed full of low-fat, high-fiber goodness, which makes it a perfect example of a winter comfort food. | | | Broccoli Soup | Probably my favorite all-season soup, broccoli soup is velvety smooth, filling and delicious. | | | Cauliflower Soup | What cauliflower lacks in color, it makes up for in nutrients.
