If you haven't tried quinoa, you're missing out on a delicious superfood. For tonight's dinner, I've picked out a recipe for quinoa stuffed bell peppers. They're low in calories, but they've got lots of flavor from a variety of ingredients. I think all it needs is a simple tossed green salad and some low-fat corn bread.
