Halloween Sugar Cookies
These buttery delights contain only about half the butter called for in most sugar cookie recipes yet still produce a sweet and satisfying sugar cookie. Red and orange food coloring gives these cookies an orange hue.

 


Quick and Easy Pumpkin Pudding
This quick and easy pumpkin pudding starts with butterscotch pudding mix. This pumpkin-flaovred dessert works for my kids, who claim not to like pumpkin pie.

 


Tomato, Pumpkin, and Black Bean Soup
Canned pumpkin is not only for pumpkin pie. Sometimes I use it in savory dishes, too. My latest recipe to incorporate pumpkin puree is this soup. Now the thing about canned pumpkin puree (as opposed to canned pumpkin pie filling, which usually sits on a nearby shelf) is that it's 100 percent pure pumpkin, with no salt, sugar, or spices. This is what makes it so versatile.
