It’s different when it happens to you. I've been teaching fitness and wellness topics for many years. I’ve taught heart-healthy cooking, strong bone nutrition, dining with diabetes, and lots of general healthful eating strategies. I’ve seen people get frustrated as they try to understand conflicting dietary recommendations. I’ve seen people struggle to make major lifestyle changes as a result of a medical diagnosis. Nothing seems to make people more serious about a dietary change than a sudden health event. But nothing you can teach makes this more real than when it’s your family.

Make Salsa for a Low-Cost Health Fair Idea

Make Salsa

One of our number one requests is for free or low-cost health fair materials.

We created a "salsa kit" that teaches everyone make salsa to eat more fruits and veggies. And for a fun exercise lesson they get to learn to dance the salsa, too. It is the perfect combo of vegetables and movement. You can use our idea to make salsa and demonstrate the simple dance pattern with YouTube music or purchase the kit inexpensively in our store.


Here is another idea to incorporate fruits and veggies:

Carol Schnittjer, RD, and colleagues held a Fun Food Fair for both parents and preschoolers, with 20 in attendance. It was held in the afternoon at a Head Start program in their community, which has kitchen facilities. Stations were set up around the room and in the kitchen with food ingredients, utensils, equipment and recipes for various healthful snacks. Three recipes included fruits and vegetables. Children and their parents prepared Dippy-Do Vegetable Dip and cut up various raw fruits and vegetables to dip, including broccoli, turnips, red peppers and carrots. A yogurt-based Sunshine Dip was made to go with a variety of fresh fruit, including mangoes, cantaloupe and strawberries. Children were also provided a variety of canned and fresh fruit and dry cereal to build their own Yogurt Sundaes using french vanilla yogurt.

One customer requested a fruit and vegetable balloon display which is new. Others are making salads for their classes and health fairs. Get ideas now - or hit reply and make a request.

Barbara Rice, MS, RD, at Johnson Space Center conducted a presentation titled, Eating from the Rainbow. This featured fresh fruits and vegetables as well as some other foods whose nutrient contents may offer protection against cancer, diabetes, stroke, arteriosclerosis, cardiovascular disease risks as well as risks for other chronic diseases.
