| Have you ever eaten a turkey egg? I hadn't either until I got a surprise this week when the farmer who brings eggs to me (I know! I'm so lucky!!) left a separate container with three beautiful speckled eggs that turned out to be turkey eggs (for a photo of turkey eggs, see my blog). To me, this was perfect because, of course, spring is here, and eggs and spring go together in so many ways. I hope spring is obviously arriving where you are, but even if it's been delayed, enjoy some eggs soon! Laura |

Easy to make, and great to have around for snacking. This is a fairly basic recipe, but I have suggestions for variations, and really, it's up to your imagination! | Denver Casserole
Like a Denver omelet, only in casserole form. You can have this loaded into the oven in 10 minutes or so. We have it for dinner, but it's a great brunch casserole. | |
