 Have you ever eaten a turkey egg?  I hadn't either until I got a surprise this week when the farmer who brings eggs to me (I know!  I'm so lucky!!) left a separate container with three beautiful speckled eggs that turned out to be turkey eggs (for a photo of turkey eggs, see my blog).  To me, this was perfect because, of course, spring is here, and eggs and spring go together in so many ways.  I hope spring is obviously arriving where you are, but even if it's been delayed, enjoy some eggs soon!  Laura

Consider the egg. Its purpose is to bring new life into the world and to nourish that life until it reaches the point where it can survive on its own.  Easy to make, and great to have around for snacking. This is a fairly basic recipe, but I have suggestions for variations, and really, it's up to your imagination!

Denver Casserole

 Like a Denver omelet, only in casserole form. You can have this loaded into the oven in 10 minutes or so.  We have it for dinner, but it's a great brunch casserole.
