The hens are happier, the eggs are more nutritious, and everyone wins. During the winter when there is less light, hens that aren't raised with artificial light don't lay many eggs. But with the return of spring, there is a return of the light, and a return of great eggs! Cook some up for a weekend breakfast or brunch, and celebrate spring!
