One of the great things about Thanksgiving is that after a big push of cooking, we have leftovers galore. When we get tired of turkey, we put some in the freezer to use these recipes in the coming weeks. I hope those in the U.S. are having a wonderful long weekend and others a nice weekend as well. Laura 


What to do With Leftover Turkey

When it comes to roast poultry, I often like the leftovers better than the main meal. Here are 9 low-carb ways to use leftover turkey or chicken. 


Rainbow Soup

 The day after Thanksgiving my father always has the turkey carcass in a pot to make a stock for soup. I'll admit that I have only actually gotten around to this a few times, but you don't need turkey stock to make this healthy soup!


Low-Carb Turkey Tetrazinni

 One of my husband's favorite uses for leftover turkey.We like it best made with spaghetti squash, but shirataki noodles, or low-carb pasta also work fine. 


Turkey Divan

This is another old-fashioned comfort dish. Mushrooms, broccoli, and walnuts give lots of texture to this warming dish.

Stretch It Out
