Day Two
Baked Cod Provencal, Brown Rice and Green Vegetables
Tonight's dinner includes baked cod provencal, brown rice, sautéed broccoli and a kale salad. Cod is low in fat and a good source of protein, and eating brown rice instead of white rice is a nice way to increase your fiber intake. I've added broccoli and kale, two vegetables that make most superfoods lists. Get the recipes!
