Here are some of my tips for overcoming them, with links to low-carb recipes. | Crockpot Ropa Vieja This Cuban dish of beef, peppers, and onions is delicious and is a great leftover-generator for a few meals. | Crock Pot Chicken Cacciatore I use chicken thighs for this classic Italian dish so it will stand up better to long heat. Yum! | Hungarian Goulash This isn't a 100% traditional goulash, but the basic flavors are here. I like to serve it on a bed of sauteed cabbage strips.
