    Microwave Dutch Apple Oatmeal

    Engage Kids in Nutrition Education!

    It can be tough to teach kids about the importance of nutrition, especially when the material is on the dry side. Yet eating well is hugely important for children, especially as they grow and play. Instead of staying up all night trying to find a fresh take on MyPlate, why not try this activity book on for size?

    Make nutrition education fun with this great resource!

     
    Cherry Apple Skillet Pie

    Serves: 8 | Serving Size: 1/8th slice
    Total Time: 30 min | Prep: 10 min | Cook: 20 min

    Ingredients:
    1 tsp olive oil
    3 baking apples, peeled, cored and sliced
    1 cup frozen pitted cherries
    1/2 orange - zest and juice
    1/2 teaspoon cinnamon
    2 cups fat-free pancake batter
    Garnish: 1 tablespoon brown sugar, zest of 1/2 orange

    Directions:
    Preheat oven to 350°. Heat a 10 inch nonstick skillet over medium high heat. Add the olive oil and then the apples. Saute briefly and add the cherries, orange juice, zest and cinnamon. Bring to a boil, reduce to a simmer and simmer briefly while you prepare the pancake batter. Pour pancake batter over the top of the fruit and place the pan in the oven. Bake until top is golden brown, about 15 minutes. Allow to cool and then invert onto a large round plate. Garnish with a little brown sugar and orange zest.
