Think Salads Are Automatically Low Fat? Think Again | I remember stopping off at a local fast food joint with my kids and thinking that the healthiest option for me would be a salad. I ordered the chef's salad. When it landed on my tray, I looked at the crispy breaded chicken pieces (pretty sure I ordered grilled chicken), bacon bits, chopped eggs, blue cheese crumbles, and black olives that lay on top of the iceberg lettuce and realized that a small burger and fries might have been a tad healthier.
Building a Healthier Salad | What could be healthier or more low fat than salad? Well, it depends what’s in it and on it. In its basic state—a bed of salad leaves with chopped vegetables, it is indeed low fat and healthy. It’s what is added to our salads that can get us into trouble.

Tuna and Shell Pasta Salad | My daughter calls this the Little Mermaid salad, since it features tuna fish and shell pasta. It's an ideal low fat salad to take along to a potluck or picnic.
Farfalle with Asparagus and Cherry Tomatoes | Crisp bright green asparagus and sweet red cherry tomatoes tossed with farfalle (bow tie) pasta makes a colorful and delightful spring supper. Serve with some crusty bread or a green salad on the side.
