| | My older daughter is about to go to college for the first time, and shortly after, my younger one heads off to high school. For us, to all intents and purposes, summer is over. There are lingering elements, of course: the abundance of tomatoes and zucchini, the Labor Day weekend, and a few weeks of longish daylight hours. But I am beginning to look ahead to fall and the abundance of gorgeous produce I can start buying very soon. For now, though, here are some late-summer recipes for you to enjoy. | | Tomato Basil Phyllo Tart I am always looking for new and different ways to use tomatoes while they are so abundant. One of my new favorite ways is to make this tasty low fat, low calorie tomato tart, which is made with flaky phyllo dough, a little pesto and topped, of course, with fresh roma tomatoes and chopped basil. Quite simply, it's a taste of pure summer and a healthy one, too.
| Zucchini Rounds With so much zucchini around, we're always looking for new ways to use them. There are muffins, of course, quick breads, salads, pasta dishes, and then there's this great snack or appetizer recipe for crunchy zucchini rounds.
| Zucchini Muffins A sprinkling of raisins and heart-healthy walnuts make these low fat muffins the zucchini equivalent of Morning Glory Muffins. Enjoy with a low fat smoothie for a great start to your day.
| Zucchini Tomato Gratin Zucchini and tomatoes go well together in this baked vegetable dish. A little cheese and breadcrumbs on top adds a nice crunch.
