Salad conjures up different things to different people. It can be a side dish, a main dish, or a sandwich filling. I have an example of each. also, in case you missed it last week, I have a review of a fun anti-diet book that offers great advice about how to eat better. Have a wonderful week!

 

Healthy Watermelon and Tomato Salad
Enjoy this watermelon and tomato salad at room temperature, which apart from bringing out the flavors, is supposed to allow us to enjoy the maximum health benefits from the watermelon. Like tomatoes, watermelon is an excellent source of lycopene, but it's at its most potent in room temperature fruit.

Low Fat Chicken and Apple Salad
This chicken and apple salad can be used atop a bed of lettuce and crunchy salad vegetables, or stuffed into a pita pocket for a sandwich.

Asian Chicken Noodle Salad
This terrific Asian chicken dish tastes like take-out but is simple to make at home, where you can be sure you are using healthy ingredients. Remember, peanut butter contains mostly monounsaturated fat, which is the heart healthy kind.
