 It's that time of year when I do not want to turn on the oven, or even the stove very much.  We don't have air conditioning, and the temperature has been above 90 (and ever hovering near 100) most days recently.  So, salads!  Lots of salads!  Luckily, there are as many flavor variations in salads as the imagination can come up with.  Have a great weekend, and stay cool!  Laura

Salads from Around the World

 All the world loves a salad, so I've collected low-carb salad recipes from around the world, many of them from About.com's many food sites. No chance of getting bored with all these delicious ideas!


Thai-Style Chicken Salad

 My favorite meal salad, this has a refreshing combination of textures and Southeast Asian flavors.


Low-Carb Taco Salad

 Tip: Take a few minutes to cook the ground beef in the cool of the morning. Then throw the salad together in a few minutes come dinner time.

Another favorite: Chopped Salad with Chicken, Bacon, and Avocado. I'm a fan of chopped salad - just cut up a head or two of romaine and mix in everything else, so every bite has different flavors and no big leaves to wrestle with.


Healthy Salad Dressings
Healthy salad dressings are not all that easy to find in the stores. Here's a guide to help you, and also a recipe and some links to easy tasty salad dressings you can make yourself, including Easy Blue Cheese Dressing and Greek-Style Lemon Garlic Dressing.
