It's easy to get carried away with the festivities and fireworks of July 4th, and why not?! It's also easy to overeat, thanks to the day time picnics and evening barbecues that take place across the United States. Well, never fear: you can enjoy the same kinds of July 4th fare, only with less fat and fewer calories.

 

A Lighter July 4th
Summer fare ought to be light, but all too often it's heavy and stodgy. Think burgers, potato salad, brownies, and pie. All delicious, of course, but hardly light. Still, you can compromise and enjoy lightened traditional July 4th fare.

10 Summer Salads
Not all salads are healthy, and it really says something when you are able to consume fewer calories eating a small burger and fries than a bowl of salad at some restaurants. By contrast, these fresh, colorful, light yet satisfying, summer salads have some nutritional value, carry fewer calories and less fat, and make great weeknight meals or picnic food.

Poached Chicken Breasts
Poached chicken breasts are succulent and tender, making them a great alternative to store-bought rotisserie chicken, which can sometimes be dry and high in sodium. Use poached chicken in your favorite soup recipes, in salads, burritos or as a salad filling.

 


Tuna and Spinach Salad
A simple and nutritious salad of tuna, tomatoes, spinach, white beans, mushrooms and artichoke hearts, dressed in a light vinaigrette.
